Sneaky Peanut Butter and Jelly Sandwiches with Spinach

I have yet to meet a two-year-old who does not adore PB&J’s or “PB Jellies” as they are called in our home. Seriously if allowed,  Amelia would eat one for each meal.

Peanut butter and Jelly w/ Spinach? Say what?!? Yes, you read this correctly. Spinach, but trust me you can’t taste it. I promise. The trick is to use either blue berry, mixed berry, or grape jelly. Jams work better than jellies (it’s a texture thing).

To sneak the spinach into the jam is very simple.

Ingredients:

Frozen spinach or steamed fresh spinach

Jelly or jam (Berry, Blueberry, Grape are best to hide the color and flavor of the spinach).

Method:

Puree the spinach, try not to add too much water. (I love my magic bullet for this.)

Then either mix or puree the jam and spinach together using the ratio of

1 part spinach : 2 parts jam/jelly

(You may want to mix it lighter on the spinach and test it out on your unsuspecting child).

It will keep for about 3-5days in a covered container (4 oz jelly mason jars work perfectly!) Just give it a good stir before each use.

Freeze any left over spinach puree in ice cube trays for future sneaky recipes.

This christmas I used this mixture in my blueberry tartletts.
