Sneaky Grilled Cheese Sandwiches with Sweet Potato

So… I have to admit something;  My daughter pretty much lives on PB & J’s, Mac & Cheese, and Grilled Cheese Sandwiches. I tackled making my own organic raw freezer jam for the PB and J’s and homemade Mac & Cheese.

Now on to getting veggies into the grilled cheese…

According to my 2-year-old if cheese isn’t yellow (or the lovely “orange” brought to us by yellow #5  and Red 40 Lake) it isn’t “good cheese”.

“Mom I want the good cheese on it. This (pointing to the white raw cheddar cheese ) is not the “good cheese”,  it is not yellow. No good mom.”

Sneaky mom to the rescue, “yellow cheese” created with purreed sweet potato, squash, carrot, or pumpkin. You want “yellow” cheese kid. Ok, yellow cheese is what you’ll get. I like to use sweet potato because it  is not only sweet and tasty but, is chock full of vitamins and fiber. You can buy canned sweet potato purée ( our family prefers the Organic Farmer’s Market Brand) or roast fresh sweet potatoes and wiz them up. Freeze left-overs in ice-cube trays, use as baby food, or stir into Sneaky Mac & Cheese (Recipe coming soon!)


Sneaky Grilled Cheese Sandwiches with Sweet Potato


  • Two slices of bread
  • Butter
  • Cheese
  • 1 tbsp Sweet potato puree (or other vegetable of choice)


 These instructions are for y’all who don’t know how to construct a grilled cheese. It’s ok.

  1. Butter both slices of bread on one side only.
  2.  Spread sweet potato on one of the non-buttered sides
  3. Top with cheese and second slice of bread (buttered side out).
  4. Grill on a skillet at med-high until browned on each side and cheese is all melty.
  5. Enjoy it Minnesota style with a cup of creamy tomato soup. Yum!
